Copper is a metal that can be oxidated by acid. The air mixed water can generate weak acid.The detergent you use may be weakly acidic too.

If you want to slow down the oxidation progress and keep the color stay longer when it is in your hand, you can wax it often. The wax can be car wax,bee wax,funiture wax etc.
The grease on your dishes also works. So the natural oxidation is actually very slow, it takes years.
